Musana farm is located in the Bulambuli region, near the border with Kenya, at the foothills of Mount Elgon. After harvesting from the trees, coffee cherries are brought to drying areas in Mbale. Before being spread under the sun, all beans are hand-sorted and cleaned again.
Sherif Başaran says, “During our tasting in October 2023, we noted flavors of apricot, sun-dried raisins, dried fig, and hints of peach. It has a full-bodied and balanced malic acidity, making it easy to drink despite being natural processed. It performs well in filters like Aeropress, Chemex, and V60.”
“For espresso, at a ratio of 1:2.5 and not exceeding 91 degrees Celsius, reducing the pressure to 7.5-8 bars can bring out the malic acidity (found in apricot) and fruity notes. If your espresso machine standard is set at 9 bars and 93 degrees Celsius, it’s beneficial to wait 12-14 days after roasting to achieve a high-bodied, balanced coffee with rich crema.”
